Dutch Oven White Bean Chili

This is a recipe that is quick to put together, doesn't have a lot of ingredients and is very filling. It would be a good beginner recipe for someone just learning how to cook with a dutch oven.

Place 6-8 coals under dutch oven, let oven get hot. Add 2-3 tablespoons of oil and 2-3 slices of diced bacon. When almost done add 2 tablespoons diced onion and 1 diced clove of garlic. Stir often. Cooking with charcoal is not an exact science and I have found that cooking with a dutch oven a watched pot does boil!
When your bacon/onion is done, add 4 cans drained Great Northern Beans, 1 can chicken, 2 cans chicken stock, 1 (4oz) can chopped green chilies, 1 tsp salt and 1/4 tsp pepper. Put lid on oven and add 6-8 coals on top, let simmer for 30 minutes. Stir every 10 minutes. Sour cream can be added to your bowl of chili or 8 ounces can be stirred into your whole pot.
I will be sharing this recipe to these blog parties:
