Cantaloupe Pie

This is a recipe that is great for summer, it is light and not too sweet. It is unique and one that is best made with  fresh summer time cantaloupe. I will be posting this to Tempt my Tummy Tuesday  and Foodie Friday.

Ingredients:
1 medium cantaloupe
3 oz cream cheese (softened)
1/4 cup sugar
2 envelopes unflavored gelatin
1/2 cup orange juice
 1 (9) inch graham cracker crust, chilled
Sweetened whipped cream


Slice your cantaloupe in half and use a spoon to clean out seeds. Peel and cut into chunks.


Place chunks into blender and process until smooth.
Add cream cheese to cantaloupe and blend again until smooth.
Combine sugar, gelatin and orange juice in small saucepan and let stand for 2 minutes. Cook over low heat, stirring sugar and gelatin until dissolved. Slowly add to melon mixture, stirring well. 
Pour into chilled crust, chill until firm.
Posted by PicasaGarnish with whipped cream and cantaloupe slices. This could be put into dessert bowls, topped with whipped cream to make it gluten free.

  3. I've never heard of this either! I'm allergic to cantaloupe, so I probably wouldn't try it, but it looks beautiful!
