Fruit Cocktail Cake


This is a classic cake that has been served to countless Sunday dinners and Holidays!

Recipe:
1 1/2 c. sugar
2 eggs
2 c. Fruit Cocktail (undrained)
3/4 tsp salt
2 c. flour
2 tsp soda
Blend sugar, eggs and fruit cocktail. Sift together salt, soda and flour. Add to sugar mixture and stir until well mixed. No need to beat. Pour into greased 9x13 inch casserole pan. 

Mix 1/2 c. brown sugar and 1 c. chopped nuts. Sprinkle on top of cake.
Bake for 35 minutes at 350 degrees.

Icing:
1 stick margarine
1 1/2 c. sugar
1 c. evaporated milk
 1 tsp vanilla
1 c. coconut
1/2 c. nuts.
Mix margarine, sugar and milk in saucepan, boil 2 minutes. Stirring constantly. Remove from heat, add vanilla then coconut and nuts. Spread evenly over warm cake.
