December 6th, 2010 marks my husband's and my 30th wedding anniversary! I started cooking and baking for him when we were dating. This is one of the first desserts I baked for him. I looked thru my Betty Crocker cookbook for hours trying to find the perfect dessert and thought this looked fairly easy and very tasty. It was good 30 years ago and is just as good today.
Boil for 3 minutes: 2/3 cup sugar, 1 1/2 cups water, 2 Tblsp and 1/4 tsp cinnamon, set aside. This will make a syrup while the apples bake.
Pare and core 4 medium tart, juicy apples. Roll out pastry to 1/8" and cut into 7" squares.
Mix: 1/2 cup sugar and 1 tsp cinnamon. Place apple in center of pastry, fill center of apple with cinnamon-sugar mixture and dot with butter. Bring opposite points of pastry up over the apple. Overlap, moisten and seal. Place in pyrex pan and pour syrup in pan but not on apples. Bake at 425 degrees for 40-45 minutes. Serve with vanilla ice cream or whipped cream. Use syrup from pan to drizzle over apples.
